Keto Spicy Pasta

Fast food that's also healthy food . Try out this spicy #keto #grainfree and #vegan dish. Just three ingredients and packed with #dairyfree calcium. Add extra roasted veggies, like eggplant and roasted broccoli to complete your #meatlessmonday meal. 

 

Quick Spicy Harissa Noodles 

(Serves 1)

 

Ingredients:

  • 1/2 large peeled zucchini, sliced into ribbons with a carrot peeler (1 cup)

  • 1/2 cup large cherry tomatoes

  • Fresh basil and oregano for sprinkling 

  • 2 heaping tbsps Fun Sesames Spicy Harissa Tahini

  • Sea salt and black pepper to taste

  • Optional: 1/2 cup diced eggplant, 1/2 cup broccoli florets 

 

Method:

Preheat the oven to 450 degrees and lay out 1 small cookie sheet, lined with non-stick foil, or cooking spray. Lay out your tomatoes and lightly season with sea salt and black pepper and a light spray of cooking spray. Bake in the oven for 15 minutes and carefully remove from the oven. 

 

Toss room temperature (or warmed) zucchini ribbons with Fun Sesames and top with tomatoes and fresh herbs.
