Mediterranean Green Mix           

Skip the boring salads, and upgrade your greens in minutes. This holiday season, try something new! This salad is PACKED with fiber and brimming with juicy flavor, nutrients and healthy fats. Tahini adds that earthy creaminess to transform all your ingredients into something magical, but simple. 

Mediterranean Green Mix

Ingredients

  • 4 cups Mixed Greens 

  • 1 can of hearts of palm, rinsed and drained and cut into 1 inch medallions, if not already 

  • ¼ cup sprouted pumpkin seeds 

  • 1 tbsp Olive oil 

  • 1 tbsp Lemon juice

  • Fun Sesames Tahini (as much as you like)

  • 8 fresh figs, halved 

  • ⅛ cup red onion, sliced into thin slivers 

  • Sea salt and pepper to taste

Method

Toss your greens with olive oil and lemon juice and plate, or put in serving bowl. Heat a medium frying pan to medium high and add cooking spray or a touch of olive oil. Carefully add hearts of palm and “flash fry” for 90 seconds on each side. Take off heat and allow to cool. Divvy up remaining ingredients between plates and add room temperature hearts of palm. Finish with a beautiful drizzle of Fun Sesames Tahini. Add more, for more FUN.
